1 lb ground turkey
1 tbsp avocado oil
1 tbsp taco seasoning
Tortillas (whole wheat or Siete Foods grain-free tortillas)
1 medium red bell pepper, chopped
1/4 red onion, diced
Few handfuls of mixed greens
1 large ripe avocado
1 tbsp red onion, diced
3 tbsp chopped cilantro
1 lime, juiced
sea salt and pepper, to taste
Smash avocado in a bowl. Add onion, cilantro, lime juice, sea salt and pepper. Stir together.
In a medium skillet, heat oil over medium heat. Add the ground turkey and brown it. Add the taco seasoning. Cook the turkey about 5-7 minutes, or until fully cooked.
Heat tortillas over an open flame until slightly browned + bubbly. Add the mixed greens to the tortilla, meat, bell pepper, red onion, guac, and any other desired toppings. Dig in!
