The Easiest Italian Chicken


Recipe Adapted from Rachael Good Eats

Serves Two


The Ingredients

  • 2 chicken breasts

  • 3 tbsp extra virgin olive oil

  • 1.5 cups sliced mushrooms

  • 1/2 cup cherry tomatoes, halved

  • 2 tbsp capers

  • 1/2 lemon

  • 1/4 cup basil, freshly chopped

  • 1/2 cup chicken bone broth

  • 1/4 cup kalamata olives, halved


The Instructions

  • Heat a medium skillet over medium heat. Heat oil, and add trimmed & tenderized chicken breasts. Season chicken with salt and pepper. Cook for about 5-7 on one side. Flip chicken.

  • Add mushrooms, tomatoes, capers, kalamata olives, 1/2 squeezed lemon and 2 lemon slices on each chicken breast. Cook for another 5 minutes.

  • Once chicken is seared and fully cooked, add fresh basil. Serve & bon appétit!
