Recipe Adapted from Rachael Good Eats
2 chicken breasts
3 tbsp extra virgin olive oil
1.5 cups sliced mushrooms
1/2 cup cherry tomatoes, halved
2 tbsp capers
1/4 cup basil, freshly chopped
1/2 cup chicken bone broth
1/4 cup kalamata olives, halved
Heat a medium skillet over medium heat. Heat oil, and add trimmed & tenderized chicken breasts. Season chicken with salt and pepper. Cook for about 5-7 on one side. Flip chicken.
Add mushrooms, tomatoes, capers, kalamata olives, 1/2 squeezed lemon and 2 lemon slices on each chicken breast. Cook for another 5 minutes.
Once chicken is seared and fully cooked, add fresh basil. Serve & bon appétit!
