1 package of organic chicken sausage links
1 head of broccoli
2 medium sweet potatoes
1/4 cup of parmesan
2 tbsp olive oil
Your fav seasonings (chili powder, turmeric, pink salt, black pepper)
Toppings: avocado, hemp seeds, hot sauce
Preheat oven to 425º F
Cut up sweet potatoes into cubes and drizzle with olive oil and your favorite seasonings (just eye-ball it). It's all about simplicity, right?! ;)
Dice the onion and place in a small skillet over medium-low heat. Drizzle with olive oil and let caramelize stirring as needed.
Bake the sweet potatoes for 20 minutes. Slice the sausage and broccoli (after washing) and toss in 1-2 tbsp olive oil.
When the 20 minutes are up, flip the sweet potatoes. Put back in the oven for another 20 minutes. Add the chicken sausage and broccoli to the onion skillet. Move the onion, chicken sausage, and broccoli around the skillet until chicken is fully cooked.
Place all the ingredients in two bowls and top with parmesan. Enjoy!
