The easiest meal to make!
1 lb of boneless, skinless chicken breasts
1/2 packet taco seasoning
1 red onion, sliced
2 bell peppers, sliced
1/2 cup shredded Mexican cheese (or Daiya cheese for DF)
3 tbsp olive oil
Preheat oven to 375º F.
Place chicken breasts in the baking dish. Add the taco seasoning on the chicken breasts and with washed hands, gently rub the seasoning on the chicken breasts.
Layer the onions and bell peppers on top of the chicken.
Drizzle the 3 tbsp of olive oil over the veggies + chicken.
Sprinkle cheese on top. I like to add a little extra cheese :)
Bake for 45 minutes or until chicken is fully cooked. Dig in!
