Chicken Fajita Bake

The easiest meal to make!


Recipe Adapted from Caitlyn Covington

Serves Three-Four


The Ingredients

  • 1 lb of boneless, skinless chicken breasts

  • 1/2 packet taco seasoning

  • 1 red onion, sliced

  • 2 bell peppers, sliced

  • 1/2 cup shredded Mexican cheese (or Daiya cheese for DF)

  • 3 tbsp olive oil

The Instructions

  • Preheat oven to 375º F.

  • Place chicken breasts in the baking dish. Add the taco seasoning on the chicken breasts and with washed hands, gently rub the seasoning on the chicken breasts.

  • Layer the onions and bell peppers on top of the chicken.

  • Drizzle the 3 tbsp of olive oil over the veggies + chicken.

  • Sprinkle cheese on top. I like to add a little extra cheese :)

  • Bake for 45 minutes or until chicken is fully cooked. Dig in!
