Vegan Olive Oil Brownies

Makes one 9x9 pan


A crowd pleaser! Who doesn't love a dense, chocolatey brownie?! If you need a delicious dessert that fits most diets, these vegan, refined-sugar-free brownies are sure to hit the mark!


The Ingredients

Dry

  • 1 cup all-purpose flour

  • 1/4 cup unsweetened cacao powder

  • 3/4 cup coconut sugar

  • 1/2 tsp baking powder

  • 1 tsp Malden flakey sea salt

Wet

  • 1.5 cups Hu Kitchen chocolate gems, melted + some extra (unmelted gems) for topping

  • 1 medium ripe banana

  • 1/8 cup maple syrup

  • 1/4 cup water

  • 1/4 cup oat milk

  • 1/4 cup brewed coffee

  • 3/4 cup extra virgin olive oil

  • 1 tsp vanilla


The Instructions

  • Preheat the oven to 375ºF.

  • Combine all the dry ingredients in a large bowl.

  • Melt the chocolate gems in the microwave on intervals of 30 seconds, taking out to stir every interval, or over a double boiler on the stove.

  • Once the chocolate gems are melted, combine all the wet ingredients in bowl and mix.

  • Pour the wet ingredients into the dry ingredients and mix until fully incorporated. I used my KitchenAid Mixer and mixed at a high speed to get the "whipped fluffy" factor.

  • Grease a 9x9 baking dish, and line with parchment paper. Next, grease the parchment paper. Pour the batter in the parchment paper lined dish. Top with some Hu Gems. Place in oven and bake for 25-30 minutes.
