Serves 1
The Ingredients
1 cup brown rice
1/4 cup chopped red onion
1/2 cup chopped romaine
1 grilled chicken breast, sliced
1/2 cup broccoli florets
1/4 cup shelled and chopped pistachios
1/3-1/2 cup feta
Dressing
Olive oil, lemon, salt + pepper, to taste
The Instructions
Season your chicken with salt + pepper & grill.
Heat oven to broil. Place broccoli on a baking sheet, drizzle with EVOO and a dash of salt. Broil for 5-7 minutes.
Make your brown rice according to the package instructions. (Hack: Since I don't eat a lot of rice, I just buy frozen brown rice and microwave it when I need it -- saves so much time!)
Chop the red onion, washed romaine, and shelled pistachios.
Add all the ingredients to a bowl, add your dressing, and enjoy!
