A Twist on the Trending Jen Aniston Salad

Recipe by Emily Bowen, Adapted from Jen Aniston ;)

Serves 1

The Ingredients

  • 1 cup brown rice

  • 1/4 cup chopped red onion

  • 1/2 cup chopped romaine

  • 1 grilled chicken breast, sliced

  • 1/2 cup broccoli florets

  • 1/4 cup shelled and chopped pistachios

  • 1/3-1/2 cup feta


  • Olive oil, lemon, salt + pepper, to taste

The Instructions

  • Season your chicken with salt + pepper & grill.

  • Heat oven to broil. Place broccoli on a baking sheet, drizzle with EVOO and a dash of salt. Broil for 5-7 minutes.

  • Make your brown rice according to the package instructions. (Hack: Since I don't eat a lot of rice, I just buy frozen brown rice and microwave it when I need it -- saves so much time!)

  • Chop the red onion, washed romaine, and shelled pistachios.

  • Add all the ingredients to a bowl, add your dressing, and enjoy!
