A childhood classic without all the unnecessary add-ins and preservatives!
Recipe Adapted from Caitlin Covington
1 cup carrots, diced
1/2 cup white onion, chopped
1/2 cup celery, diced
1.5 cups uncooked egg noodles
70 oz chicken bone broth
1.5 cups rotisserie chicken, shredded
1 bay leaf
1/2 tsp ground sage
1/4 tsp ground thyme
1/4 tsp ground rosemary
S + P, to taste
1/2 tbsp butter
Heat the butter in a large pot over medium heat. Add the carrots, onion and celery and sauté for 5 minutes.
Add the bone broth, shredded chicken, uncooked egg noodles, and add the seasoning.
Bring the mixture to a boil for a minute or two, and then bring to a simmer. Cook for 20 minutes. Remove the bay leaf before serving. Cozy up and enjoy!
