Chicken Noodle Soup

A childhood classic without all the unnecessary add-ins and preservatives!


Recipe Adapted from Caitlin Covington

Serves Two-Three


The Ingredients

  • 1 cup carrots, diced

  • 1/2 cup white onion, chopped

  • 1/2 cup celery, diced

  • 1.5 cups uncooked egg noodles

  • 70 oz chicken bone broth

  • 1.5 cups rotisserie chicken, shredded

  • 1 bay leaf

  • 1/2 tsp ground sage

  • 1/4 tsp ground thyme

  • 1/4 tsp ground rosemary

  • S + P, to taste

  • 1/2 tbsp butter


The Instructions

  • Heat the butter in a large pot over medium heat. Add the carrots, onion and celery and sauté for 5 minutes.

  • Add the bone broth, shredded chicken, uncooked egg noodles, and add the seasoning.

  • Bring the mixture to a boil for a minute or two, and then bring to a simmer. Cook for 20 minutes. Remove the bay leaf before serving. Cozy up and enjoy!
