Chicken Piccata


Adapted Recipe from Alex at the Defined Dish

Serves Two


The Ingredients

  • 1.5 cups uncooked whole wheat pasta bowtie

  • 2 cups mixed greens

  • 2 chicken breasts

  • 1.5 tbsp extra virgin olive oil

  • 1 tsp kosher salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp smoked paprika

  • 1 small lemons sliced into 1/4 inch rounds

  • 1/8 cup white wine vinegar

  • 1/8 cup chicken bone broth

  • 1 clove garlic, minced

  • 1 tbsp capers, drained

  • 2 tsp parsley


The Instructions

  • Preheat oven to 450ºF.

  • Cook pasta according to box instructions.

  • Place chicken in a baking dish pan and drizzle with olive oil & season with salt, pepper, and smoked paprika. Rub chicken until fully coated.

  • Add in the sliced lemons around the chicken. Pour the white wine and chicken bone broth on top of the chicken.

  • Roast until chicken on middle rack until golden brown, about 25 minutes. Remove from oven and add garlic, capers, and parsley.

  • Add back to the oven and bake for 5-10 more minutes (be careful not to burn).

  • Serve over a bed of mixed greens + pasta & enjoy!
