1.5 cups uncooked whole wheat pasta bowtie
2 cups mixed greens
2 chicken breasts
1.5 tbsp extra virgin olive oil
1 tsp kosher salt
1/4 tsp ground black pepper
1/4 tsp smoked paprika
1 small lemons sliced into 1/4 inch rounds
1/8 cup white wine vinegar
1/8 cup chicken bone broth
1 clove garlic, minced
1 tbsp capers, drained
2 tsp parsley
Preheat oven to 450ºF.
Cook pasta according to box instructions.
Place chicken in a baking dish pan and drizzle with olive oil & season with salt, pepper, and smoked paprika. Rub chicken until fully coated.
Add in the sliced lemons around the chicken. Pour the white wine and chicken bone broth on top of the chicken.
Roast until chicken on middle rack until golden brown, about 25 minutes. Remove from oven and add garlic, capers, and parsley.
Add back to the oven and bake for 5-10 more minutes (be careful not to burn).
Serve over a bed of mixed greens + pasta & enjoy!
