Copy Cat Reese's Peanut Butter Bites (DF, GF, Refined Sugar-Free)

Recipe Adapted from Rachael's Good Eats

Makes 12 balls


The Ingredients

Filling

  • 1/2 cup creamy salted peanut butter

  • 2 tbsp maple syrup

  • 2 tbsp melted ghee or coconut oil

  • 1/2 tsp vanilla extract

  • 2 scoops Vital Proteins collagen peptides (optional)

  • 10 tbsp almond flour

Outer Chocolate Layer

  • 1 tbsp ghee or coconut oil

  • 1 chocolate bar/2.5 oz of chocolate, chopped (Eating Evolved Dark Chocolate or Hu Kitchen Salted Dark Chocolate -- both DF!)


The Instructions

  • In a medium bowl, mix all the wet ingredients together. Then, fold in the dry ingredients.

  • Mold dough into 12 balls. Place on a silicon mat, or a parchment paper. Put in freezer for 10 or so minutes.

  • Melt the ghee/coconut oil and chopped chocolate in a microwave dish on 30 second intervals (stirring in between intervals) until fully melted.

  • After PB balls have hardened, use two forks to dip the ball in the melted chocolate. Place on a silicon mat, or a parchment paper.

  • Place in freezer to harden for 15 or so minutes. Store in freezer (if there are any left ;)) & enjoy!
