Makes 15 Cookies
The Ingredients
Cookie Dough
1 egg
1/2 cup tahini
1 tsp vanilla extract
3 tbsp maple syrup
3 tbsp coconut oil, melted and cooled to room temp (or butter, but it won't be DF then)
1/3 cup raw cacao powder
2 tbsp almond flour
pinch flakey sea salt
1/4 tsp baking soda
1/3 cup Hu Chocolate Gems
Topping
pinch flakey sea salt
3-4 tbsp additional Hu Chocolate Gems
The Instructions
Preheat oven to 350ºF.
In a large bowl, whisk together all the wet ingredients. Fold in the dry ingredients. Then, stir in the chocolate gems.
Using a cookie scoop, transfer cookie dough to a parchment lined baking sheet.
Add a couple chocolate gems to the top of each cookie. Bake for 8-9 minutes and top with flakey sea salt. Let cool for at least 5 minutes & enjoy!
