Decadent Tahini Double Chocolate Chunk Cookies

Adapted Recipe from Rachael Good Eats

Makes 15 Cookies


The Ingredients

Cookie Dough

  • 1 egg

  • 1/2 cup tahini

  • 1 tsp vanilla extract

  • 3 tbsp maple syrup

  • 3 tbsp coconut oil, melted and cooled to room temp (or butter, but it won't be DF then)

  • 1/3 cup raw cacao powder

  • 2 tbsp almond flour

  • pinch flakey sea salt

  • 1/4 tsp baking soda

  • 1/3 cup Hu Chocolate Gems

Topping

  • pinch flakey sea salt

  • 3-4 tbsp additional Hu Chocolate Gems


The Instructions

  • Preheat oven to 350ºF.

  • In a large bowl, whisk together all the wet ingredients. Fold in the dry ingredients. Then, stir in the chocolate gems.

  • Using a cookie scoop, transfer cookie dough to a parchment lined baking sheet.

  • Add a couple chocolate gems to the top of each cookie. Bake for 8-9 minutes and top with flakey sea salt. Let cool for at least 5 minutes & enjoy!
