Modified Recipe from Ashlea Carver
1/2 tbsp EVOO
4 links Applegate Chicken Feta + Spinach Sausage
1/2 cup sliced red peppers
1/2 cup sliced yellow peppers
1/2 cup sliced red onion
1/4 tsp crushed red pepper flakes
1 clove minced garlic
salt + pepper to taste
1/2 cup uncooked brown rice
Cook brown rice as directed on package.
Heat a skillet over medium-high heat. Once the skillet is warm, add in the EVOO.
Add the sliced sausage and brown, flipping occasionally. Once the sausage is cooked, add in the peppers and onions and continue to toss. Then, add in the garlic powder, crushed red pepper flakes, and a sprinkle of salt and pepper.
Continue to sauté until the onions are translucent and the papers are tender yet with a slight crunch, about 5 more minutes. Serve with brown rice & dig in!
