Recipe by Emily Bowen
Serves Two-Four
The Ingredients
1 spaghetti squash
1 lb ground turkey
1 jar of marinara sauce *no sugar added
1/2 onion, diced
3 cloves of garlic, minced
1/2 tsp dried oregano
1/2 tsp dried Italian seasoning
1/2 cup parmesan cheese
The Instructions
Preheat the oven to 400ºF. After washing, place the full spaghetti squash into the oven. Cook whole for 40-50 minutes.
While the squash is cooking, in a medium skillet cook the ground turkey over medium heat. Add the onion, garlic, and spices.
Heat the marinara sauce in a small pot on the stove over low heat, or in the microwave until warm.
Let the squash cool or 10-15 minutes and then slice off the top and bottom of the squash. Cut in half and use a fork to remove the inside for your "spaghetti."
Top the spaghetti squash with the meat, marinara sauce, and parmesan cheese and enjoy!
