Feta, Tomato, Basil Chicken


Serves Two


The Ingredients

Marinade

  • 1/4 cup nonfat plain yogurt

  • 1 cloves garlic finely chopped

  • 1 tsp. oregano

  • 1 tbsp chopped fresh basil

  • 1 tsp lemon juice

  • Salt & pepper, to taste

Main Dish

  • 2 chicken breasts

  • 2 cups mixed greens

  • 2 tsp olive oil

Cheese Mixture/Topping

  • 1 tsp oregano

  • 1 tbsp basil

  • 1/3 cup crumbled feta cheese (about 5 oz.)

  • 1/4 medium tomato chopped


The Instructions

  • Mix all the marinade ingredients together and place in dish/freezer bag. Place raw chicken in the marinade mixture. Place in fridge and let marinade for at least an hour and up to overnight.

  • Preheat grill & preheat oven to 350ºF.

  • In a small dish, combine the feta, tomato, oregano, basil, & olive oil. Set aside.

  • Grill chicken until fully cooked.

  • Place chicken in a baking dish and top with the cheese mixture. Bake for 5-8 minutes. Serve over mixed greens & drizzle with olive oil. Dig in!
