1/4 cup nonfat plain yogurt
1 cloves garlic finely chopped
1 tsp. oregano
1 tbsp chopped fresh basil
1 tsp lemon juice
Salt & pepper, to taste
2 chicken breasts
2 cups mixed greens
2 tsp olive oil
1 tsp oregano
1 tbsp basil
1/3 cup crumbled feta cheese (about 5 oz.)
1/4 medium tomato chopped
Mix all the marinade ingredients together and place in dish/freezer bag. Place raw chicken in the marinade mixture. Place in fridge and let marinade for at least an hour and up to overnight.
Preheat grill & preheat oven to 350ºF.
In a small dish, combine the feta, tomato, oregano, basil, & olive oil. Set aside.
Grill chicken until fully cooked.
Place chicken in a baking dish and top with the cheese mixture. Bake for 5-8 minutes. Serve over mixed greens & drizzle with olive oil. Dig in!
