Patriotic Fruit Pizza *Gluten-Free & Refined Sugar-Free

The Ingredients

Sugar Cookie "Pizza" Crust

  • 1 1/2 cups almond flour, packed

  • 1/4 cup Vital Proteins Unflavored Collagen Peptides

  • 1/4 tsp baking powder

  • 1/4 tsp sea salt

  • 3/4 cup coconut sugar

  • 1/2 cup pasture-raised butter, softened

  • 1 pasture-raised egg

  • 1/2 tsp vanilla extract

  • 1/2 tsp almond extract

  • 3 tbsp salted pasture-raised butter, softened

  • 1 cup cream cheese, softened

  • 8 tbsp coconut sugar

  • 4 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

  • squeeze of lemon


  • 8 oz washed strawberries, sliced

  • 1/4-1/2 pint washed blueberries

  • 6 oz washed raspberries

The Instructions

  • For the Sugar Cookie "Pizza" Crust:

    • Preheat oven to 375ºF.

    • Place all the wet ingredients into a bowl and mix together. Then, add in all the dry ingredients in the bowl and mix until just combined. This will not look like normal dough! It will look too wet - trust me, it's not!

    • Place the dough on a round baking stone. Spread dough with a spatula into a circle about 1/4" thick.

    • Bake for 15-18 minutes or so, until crust is slightly crisp.

  • For the Cream Cheese Frosting:

    • Beat together the softened butter and softened cream cheese on medium-high speed until very smooth.

    • Add the coconut sugar, maple syrup, vanilla extract, pink salt, and lemon. Beat on medium-high speed until nice and fluffy, and the coconut sugar granules are completely dissolved.

    • Spread evenly on top of cooled sugar cookie pizza crust. You may have 1/3-1/2 cup or so leftover. You can add it to a dish and dip fresh fruit into it!

  • For the Toppings:

    • Wash all the fruit. Slice the strawberries lengthwise into slivers. Here's the pattern I created on my fruit pizza:

      1. Start in the center of the crust with seven raspberries gathered together, in a flower shape.

      2. Circle around the raspberries with blueberries.

      3. Circle around the blueberries with two rows of sliced strawberries.

      4. Circle around the strawberries with one row of alternating blueberries and raspberries.

      5. Lastly, circle around the blueberries and raspberries with one row of strawberries.

  • Slice the fruit pizza into 16 slices and dig in!

  • Note: If you are making this for another occasion, I love to top with pineapple too! The more of your favorite fruits included, the better!
