This is for sure a favorite at the Bowen household. Everytime I make this, Hank goes "Are you sure this is healthy?!" It's THAT good! And, it's the perfect meal to make when you don't want to spend much time in the kitchen. Who doesn't love one-pan 10-15 minute healthy meals?!

Serves Two-Three
The Ingredients
12 oz cauliflower gnocchi (I used Trader Joes!)
2 handfuls of kale
Squeeze of half a lemon, more or less to taste
1 tbsp ghee (butter also works!)
1 tbsp pine nuts
3 cloves garlic
Generous amount of Everything But the Bagel seasoning
Parmesan cheese, to taste
The Instructions
Cook the gnocchi in the skillet according to the package instructions.
Once mostly cooked add the kale and ghee to the same skillet, over medium heat. After a minute, add the squeeze of lemon, garlic, pine nuts, and EBTB seasoning. Sauté until the kale is soft & bright green & the pine nuts are slightly toasted.
Top with Parmesan cheese & DIG IN! Tastes best eaten directly out of the skillet :)
