Makes Three Mini Loaves
1/2 cup avocado oil
1/4 cup salted butter
1/3 cup pure maple syrup
2 ripe bananas
2 pasture raised eggs
4 scoops of @vitalproteins unflavored collagen peptides
1 2/3 cups almond flour
6 tbsp. unsweetened cocoa powder
1 tsp vanilla
1 tsp baking soda
1/3 tsp salt
bittersweet chocolate, to taste (I use about 8 tbsp)
Mix all the ingredients together and pour batter into three mini loaf pans (3in x 5.5in).
Top with each loaf with a few bittersweet chocolate chips.
Bake @ 350° for 25-30 minutes.
Drizzle baked loafs with a lil bit of melted bittersweet chocolate chips & enjoy! (I melt about 5 tbsp of chocolate to drizzle over all three loaves).
