1 lb 90/10 grass-fed ground beef
2 cups cooked brown rice
1 cup chunky salsa
1/2 cup canned corn
1/2 cup canned black beans, rinsed and drained
1/4 cup Tessemae’s ranch or avocado ranch (plus more to drizzle)
1 cup shredded cheese of choice (or non-dairy cheese)
Optional, avocado and jalapeños for topping
Preheat oven to 375ºF.
Preheat a large skillet over medium-high heat. Add the ground beef and brown. Once cooked, remove meat from skillet, drain the grease and place meat back in the skillet.
Stir in the rice, salsa, corn, beans, and the ranch. Top with shredded cheese. Bake for 15 minutes. Broil for 1-2 minutes to let cheese bubble!
Top with avocado, jalapeños and an extra drizzle of ranch. YUM!
