Healthy Burrito Bake

Serves Four


The Ingredients

  • 1 lb 90/10 grass-fed ground beef

  • 2 cups cooked brown rice

  • 1 cup chunky salsa

  • 1/2 cup canned corn

  • 1/2 cup canned black beans, rinsed and drained

  • 1/4 cup Tessemae’s ranch or avocado ranch (plus more to drizzle)

  • 1 cup shredded cheese of choice (or non-dairy cheese)

  • Optional, avocado and jalapeños for topping


The Instructions

  • Preheat oven to 375ºF.

  • Preheat a large skillet over medium-high heat. Add the ground beef and brown. Once cooked, remove meat from skillet, drain the grease and place meat back in the skillet.

  • Stir in the rice, salsa, corn, beans, and the ranch. Top with shredded cheese. Bake for 15 minutes. Broil for 1-2 minutes to let cheese bubble!

  • Top with avocado, jalapeños and an extra drizzle of ranch. YUM!
