Serves Two
The Ingredients
4 large handfuls of arugula (or your fav green)
1/2 cup of cooked quinoa
1.5 cups rotisserie chicken
4 tbsp diced onion
2 tbsp pine nuts
Shaved parmesan, optional & to taste
1/2 lemon, squeezed
3-4 tbsp olive oil or avocado oil
Garlic salt, to taste

In a large bowl, toss all the ingredients together & enjoy!
