Hearty Salad

Serves Two


The Ingredients

  • 4 large handfuls of arugula (or your fav green)

  • 1/2 cup of cooked quinoa

  • 1.5 cups rotisserie chicken

  • 4 tbsp diced onion

  • 2 tbsp pine nuts

  • Shaved parmesan, optional & to taste

  • 1/2 lemon, squeezed

  • 3-4 tbsp olive oil or avocado oil

  • Garlic salt, to taste


The Instructions

  • In a large bowl, toss all the ingredients together & enjoy!
