Serves Two-Three
The Ingredients
1/2 cup uncooked sprouted brown rice
2 cups bone broth (or plain water)
1 tbsp butter
1 lb ground beef
1 tsp taco seasoning
1 medium bell pepper, diced
1/4 tsp chili powder
1/4 tsp cumin
1 tbsp olive or avocado oil
1 avocado
1/4 cup chopped cilantro
4 cups mixed greens
1 lime, cut into wedges
whole wheat tortillas
any of your favorite toppings (salsa, cheese...)
The Instructions
Cook rice according to package. The bone broth adds in extra protein + nutrients. When the rice is fully cooked, mix in butter, salt & pepper.
In a medium skillet, cook beef with taco seasoning. Drain liquid once fully cooked.
In same pan, sauté bell pepper in oil, chili powder and cumin.
Place all the ingredients in your bowl! Place mixed greens at the bottom then top with ground beef, sautéed bell peppers, rice, avocado and serve with a warmed (over open flame) tortilla. Add any of your favorite toppings. Yum!
NOTE: The nutritional breakdown is a (close) estimate as numbers change based off of brands used.
*Nutritional breakdown does not include "favorite" toppings, but it does include 3 whole wheat tortillas.
