Mixed Greens with Blackberries, Feta, Walnuts, Quinoa, & Chicken


Adapted Recipe from Eating Purely by Elizabeth Stein

Serves Two


The Ingredients

Salad

  • 4 cups mixed greens

  • 1 1/2 cup rotisserie chicken

  • 1/4 cup feta

  • 1/4 cup walnuts

  • 1 1/2 cup quinoa

  • 1/2 cup blackberries

Dressing

  • 1/4 cup blackberries

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar


The Instructions

  • Prep brown rice according to package instructions.

  • In a large bowl, assemble the salad with mixed greens, chicken feta, walnuts, brown rice, blackberries, and mint.

  • In a high speed blender, add dressing ingredients and blend until smooth. Drizzle salad with dressing and serve.
