Nourish Bowls

This is one of me and Hank's favorite recipes! One day I met a friend for lunch at True Food Kitchen. She ordered the Ancient Grain Bowl, and after trying a bite not only was I envying her order ;) I also was convinced to make my own version at home! The Nourish Bowl is a spin off of the True Food Kitchen Ancient Grain Bowl...and it's oh so delish!

Serves Two-Three


The Ingredients

  • 1 - 1.5 lbs of mild sausage

  • 2 sweet potatoes, cubed

  • 1/2 cup of dry quinoa

  • 2 8oz containers of baby bella mushrooms

  • 1/2 sweet onion, diced

  • 3/4 cup shelled edamame

  • 1/2 avocado (1/4 each bowl)

  • 2-4 tbsp of pesto (for topping)

  • pink salt & garlic salt, to taste

  • olive oil or avocado oil, to taste

The Instructions

  • Preheat oven to 425ºF.

  • Wash, peal, and cube sweet potatoes. Lay them out (not too crowded) on a baking sheet covered in parchment paper. Drizzle with olive oil and pink salt. Roast for 30-35 minutes (depending on how crispy you want them).

  • Cook quinoa as directed on package.

  • Wash (and dry) mushrooms. Place them on a baking sheet covered in parchment paper. Drizzle with olive oil and garlic salt. Roast for 15-20 minutes.

  • Cook sausage in medium skillet over medium-low heat for 7 minutes (or until fully cooked).

  • Chop and dice onion. Sauté until golden in small pan over medium-low heat with roughly 1-2 tbsp of olive oil.

  • Place all the ingredients in a bowl & top with pesto and avocado. Yum!
