Pesto Zucchini Noodles with Chicken

Serves Two


The Ingredients

  • 1 tsp. olive oil

  • 1/2 medium red onion, chopped

  • 2 cloves garlic, finely chopped

  • 1 cup sliced mushrooms

  • 4 fresh basil leaves, finely chopped

  • 2 cups zucchini "noodles" (or 2 medium zucchinis, noodle-ized).

  • 2-4 tbsp. pesto

  • 2 (4 oz. each) cooked chicken breast, boneless, skinless, sliced, warm


The Instructions

  • Grill the chicken breasts.

  • Heat oil in a medium skillet over medium heat. Add onion and cook until translucent, stirring occasionally for 3-5 minutes. Add garlic and cook another minute.

  • Add mushrooms and basil to the pan. Cook and stir for 3-5 minutes. Set aside.

  • Take zucchini noodles and add to the mixture. Cook over medium-high heat, stirring for 2-4 minutes. Add pesto & mix well.

  • Divide the zucchini mixture between two places and top with chicken! YUM!
