Simple Cashew Chicken


Adapted Recipe from Rachael DeVaux by Rachael's Good Eats

Serves Four


The Ingredients

  • 2 lbs organic chicken tenders or breasts, cut into cubes

  • 1/2 medium red onion, roughly chopped

  • 2 tbsp extra virgin olive oil

  • 3 tbsp toasted sesame oil

  • 1/3 cup coconut aminos

  • 1 tbsp honey

  • 1 tbsp arrowroot starch (or corn starch)

  • 1 large red bell pepper, roughly chopped

  • 2 carrots, diced

  • 2 handfuls snow peas

  • S + P, to taste

  • 1/4 cup cashews

  • Sesame seeds, to taste

  • Green onions, to, taste


The Instructions

  • Heat EVVO in large skillet on medium heat. Add onion and cook until caramelized, about 4-5 minutes. Add chicken and sesame oil to cook for another 5 minutes, tossing constantly.

  • Add red bell pepper, snow peas, carrots, and cashews to cook an additional 5-7 minutes. Be sure chicken is fully cooked group.

  • Add the coconut aminos, honey, and arrowroot into a small dish and whisk together. Pour over the chicken + vegetables in the skillet and cook for another 1-2 minutes.

  • Season with salt and pepper, and top with sesame seeds and green onions. Dig in!
