Serves Four
The Ingredients
2 lbs organic chicken tenders or breasts, cut into cubes
1/2 medium red onion, roughly chopped
2 tbsp extra virgin olive oil
3 tbsp toasted sesame oil
1/3 cup coconut aminos
1 tbsp honey
1 tbsp arrowroot starch (or corn starch)
1 large red bell pepper, roughly chopped
2 carrots, diced
2 handfuls snow peas
S + P, to taste
1/4 cup cashews
Sesame seeds, to taste
Green onions, to, taste
The Instructions
Heat EVVO in large skillet on medium heat. Add onion and cook until caramelized, about 4-5 minutes. Add chicken and sesame oil to cook for another 5 minutes, tossing constantly.
Add red bell pepper, snow peas, carrots, and cashews to cook an additional 5-7 minutes. Be sure chicken is fully cooked group.
Add the coconut aminos, honey, and arrowroot into a small dish and whisk together. Pour over the chicken + vegetables in the skillet and cook for another 1-2 minutes.
Season with salt and pepper, and top with sesame seeds and green onions. Dig in!
