1.5 tbsp. balsamic vinegar
1 tbsp. fresh lemon juice
1/4 tsp. pepper
2 tsp. extra-virgin olive oil
1 cups black beans
2 cups sliced bell peppers
1 cup mixed greens
1/2 cup thinly sliced red onion
1 cup chopped tomatoes
1.5 cups sliced grilled chicken breast (Need about 2 chicken breasts)
1/2 cup shredded sharp cheddar cheese
Lime for serving
Combine the balsamic vinegar, lemon juice, pepper, and olive oil in a small dish. Whisk until well combined.
Grill chicken. Grill 2 chicken breasts per recipe, but 6 if you are prepping for two people to eat this 3 times for lunch.
Layer veggies, beans, and chicken.
Top with cheese & dressing & serve with a few lime slices. Enjoy!
