Southwest Chicken Black Bean Salad

Serves Two


The Ingredients

  • 1.5 tbsp. balsamic vinegar

  • 1 tbsp. fresh lemon juice

  • 1/4 tsp. pepper

  • 2 tsp. extra-virgin olive oil

  • 1 cups black beans

  • 2 cups sliced bell peppers

  • 1 cup mixed greens

  • 1/2 cup thinly sliced red onion

  • 1 cup chopped tomatoes

  • 1.5 cups sliced grilled chicken breast (Need about 2 chicken breasts)

  • 1/2 cup shredded sharp cheddar cheese

  • Lime for serving


The Instructions

Dressing

  • Combine the balsamic vinegar, lemon juice, pepper, and olive oil in a small dish. Whisk until well combined.

Salad

  • Grill chicken. Grill 2 chicken breasts per recipe, but 6 if you are prepping for two people to eat this 3 times for lunch.

  • Layer veggies, beans, and chicken.

  • Top with cheese & dressing & serve with a few lime slices. Enjoy!
