Steak Fajitas

Serves Two

The Ingredients

  • 1 tsp. olive oil

  • 1 medium green (red or yellow) bell peppers, cut into strips

  • 1/2 medium onion, sliced

  • 1 cloves garlic, finely chopped

  • 1/2 lb. raw extra-lean beef sirloin, cut into 2-inch strips

  • 1/2 tsp. ground chili powder

  • 1/2 tsp. ground cumin

  • 1/2 tsp. crushed red pepper flakes

  • 1/4 tsp. sea salt (or Himalayan salt)

  • 1/4 cup fresh salsa

  • 4 6-inch corn tortillas, warm

  • Lime wedges

The Instructions

*Throughout all these steps, continue to stir occasionally.

  • In a large skillet heat oil over medium-high heat. Add bell peppers, onion, & cook for 5-6 minutes. Add garlic and cook for another 1 minute.

  • Add beef, spices and cook for 7-8 minutes, or until cooked as desired. Add salsa and cook for another 2-3 minutes.

  • Add all the ingredients to the corn tortillas and garnish with a squeeze of lime. Enjoy!
