1 tsp. olive oil
1 medium green (red or yellow) bell peppers, cut into strips
1/2 medium onion, sliced
1 cloves garlic, finely chopped
1/2 lb. raw extra-lean beef sirloin, cut into 2-inch strips
1/2 tsp. ground chili powder
1/2 tsp. ground cumin
1/2 tsp. crushed red pepper flakes
1/4 tsp. sea salt (or Himalayan salt)
1/4 cup fresh salsa
4 6-inch corn tortillas, warm
*Throughout all these steps, continue to stir occasionally.
In a large skillet heat oil over medium-high heat. Add bell peppers, onion, & cook for 5-6 minutes. Add garlic and cook for another 1 minute.
Add beef, spices and cook for 7-8 minutes, or until cooked as desired. Add salsa and cook for another 2-3 minutes.
Add all the ingredients to the corn tortillas and garnish with a squeeze of lime. Enjoy!
