Stuffed Turkey Burgers & Grilled Zucchini


Recipe Adapted from Rachael DeVaux at Rachael's Good Eats

Serves Two-Four


The Ingredients

Turkey Burgers

  • 1 lb ground turkey

  • 1/2 bell pepper, diced

  • 1/4 red onion, sliced

  • 1/2 cup finely chopped spinach

  • 2-3 tbsp goat cheese

  • 1/2 tsp pink salt

  • 1/2 tsp ground pepper

  • 1/4 tsp chilli powder

  • 1/4 tsp garlic powder

  • 1/2 tsp italian seasoning

Grilled Zucchini

  • 1-2 zucchini, cut in quarter slices

  • 1 tbsp avocado oil or extra virgin olive oil

  • 1 tsp adobo seasoning (or similar)


The Instructions

  • Turn on grill.

  • Combine all the turkey burger ingredients into a bowl. Mix and form into 4 patties. Set aside. Toss zucchini in oil and seasoning.

  • Grill turkey burgers. Add zucchini (on top of tinfoil if you'd like) to the grill when the turkey burgers have roughly 5 minutes left. Mmmmmm!

  • Top turkey burgers with your fav toppings (I like adding sautéd onions and avocado).
