Summer Salad

This light (yet extremely satisfying & filling) salad is perfect for any summer dinner! It is quick, easy, and oh so delicious!

Serves Two


The Ingredients

  • 4 large handfuls of baby romaine

  • 2-3 organic chicken breasts (optional: marinade for at least 30 minutes in the Garlic Expressions)

  • 1/4 cup cashews (or walnuts/pecans/sunflower seeds)

  • 3/4 cup (or as many as you want ;)) sliced strawberries

  • Goat cheese, to taste (omit if DF)

White Balsamic Vinaigrette *there will be extra dressing!

  • 1/2 cup extra virgin olive oil

  • 1/4 cup white balsamic vinegar

  • 1 tbsp honey

  • pink salt & pepper, to taste


The Instructions

  • Preheat grill. Season (marinated) chicken with pink salt & pepper. Grill chicken.

  • Place the baby romaine in a large bowl and top with cashews, strawberries, goat cheese, and sliced chicken. Pour desired amount of dressing over individual salad. Bon appétit!
