The Bowen Garlic Chicken Salad

Serves Two

The Ingredients

  • 2 large chicken breasts

  • 5 ounces of organic baby romaine

  • whole wheat pasta *choose your favorite noodle

  • parmesan cheese

  • 2 tbsp extra virgin olive oil

  • 1/2 lemon (just a lil squeeze)

  • Garlic Expressions marinade/dressing

The Instructions

  • To marinade the chicken: Place raw chicken breasts in a freezer bag and pour marinade generously over chicken. Keep marinating in refrigerator for at least 30 minutes and up to 12 hours.

  • Bring a medium pot of salted water to a boil. Cook the pasta according to the package directions. Drain the pasta and place in bowl.

  • Grill chicken.

  • On the a bed of baby romaine, add the noodles and grilled chicken. Sprinkle parmesan cheese and drizzle with extra virgin olive oil and a squeeze of lemon. Enjoy!
