Winter Salad with Candied Walnuts

Serves Six


The Ingredients

  • 2 cups raw walnuts

  • 1/3 cup pure maple syrup

  • 1/4 teaspoon ground cinnamon

  • 1 pinch crushed red pepper

  • flaky sea salt, to taste

  • 6 cups mixed greens

  • 2 cups fresh pomegranate arils

  • 1 (blood) orange, sliced

  • 1/2 cup crumbled goat cheese

Balsamic Fig Dressing

  • 1/3 cup extra virgin olive oil

  • 1/4 cup balsamic vinegar

  • 1 tbsp fig preserves

  • S + P, to taste


The Instructions

  • Preheat oven to 375ºF. Line a baking sheet with parchment paper.

  • In a small dish toss the walnuts, maple syrup, cinnamon, red pepper, and flaky sea salt together until the walnuts are well coated. Line on baking sheet and bake for 15-20 minutes -- be sure to move them around the pan twice during this 15-20 minutes.

  • Add the greens to a large bowl and top with the pomegranates, orange slices, crumbled goat cheese and candied walnuts. Toss the salad.

  • Whisk together all the dressing ingredients in a small dish. Drizzle on your salad & enjoy!
