Basil Pesto Chicken Salad

Adapted Recipe from Ashlea Carver

Serves Four-Six


The Ingredients

Basil Pesto

  • 1 cup basil leaves, packed

  • 1 cup baby spinach, packed

  • 1/3 cup pine nuts

  • 3 cloves fresh garlic

  • 1/2 cup extra virgin olive oil

  • 1/2 tbsp fresh lemon juice

  • 1 tsp salt

  • 1/4 tsp fresh cracked black pepper

  • 1/4 tsp red pepper flakes

Chicken Salad

  • 4 cups chopped chicken

  • 2/3 cup basil pesto

  • 1/2 cup Primal Kitchen Mayo

  • 1/2 c pine nuts

  • 4 tbsp diced red onion

  • 2 tbsp lemon juice

  • salt + pepper to taste


The Instructions

Pesto

  • Add all of the ingredients to a high-powered food processor/blender and blend until well combined and smooth. Store in fridge.

Chicken Salad

  • Add all of the ingredients to a large bowl and mix until well combined. Add more salt, pepper, or lemon juice to taste. Enjoy!
