BLT Chopped Salad


Serves Two


The Ingredients

  • 4 slices bacon, diced

  • 4 cups chopped romaine lettuce

  • 1 avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup corn kernels

  • 1/4 cup crumbled goat cheese

Dressing

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • Zest of 1 lime

  • 2 tablespoons freshly squeezed lime juice

  • 2 teaspoons maple syrup

  • S + P, to taste


The Instructions

  • Heat a large skillet over medium-high heat. Add bacon slices and cook until brown and crispy, roughly 6-8 minutes. Lay on a paper towel to gather excess grease.

  • In a small bowl whisk together all the dressing ingredients.

  • Dice and chop all the vegetables. In a large bowl, combine all the ingredients and top with the vinaigrette (you may have extra!) Yum!
