Cauliflower Mashed Potatoes


Serves Four


The Ingredients

  • 1 large head of cauliflower, cut florets

  • 1/4 cup ghee

  • 1 tsp salt, and pepper to taste

  • 1 tbsp unsweeted almond milk, as needed


The Instructions

  • Place cauliflower florets in a medium dish. Add a couple inches of water to the bottom of dish and place in microwave. Steam for 2-3 minutes, or until the cauliflower is soft.

  • Place ghee, s+p, and cauliflower in a food processor or blender. Blitz until desired consistency. Add almond milk if needed. Mmmmm!
