Chocolate Chip Banana Bread Oatmeal Bake

Serves Two


The Ingredients

  • 1 mashed banana

  • 1 pasture-raised egg

  • 2 tablespoons chia seeds

  • 3/4 cup nut milk or coconut milk

  • 1.5 cups organic rolled oats

  • 1/2 teaspoon baking powder

  • 1/3 cup dark chocolate

The Instructions

  • Preheat oven to 350ºF. Grease a small cast iron skillet (a baking dish would also work).

  • In a medium bowl combine the banana, egg, chia seeds, and nut milk & stir. Then, add in the oats and baking powder. Stir until combined. Fold in dark chocolate.

  • Pour the mixture into the greased skillet and bake for 15-20 minutes. Optional: Top with banana slices & a little drizzle of peanut butter! Mmmm yum!
