Who doesn't want a little extra chocolate in their banana bread?!
Serves 10
The Ingredients
3 bananas (overly ripe- about 1 3/4 cup mashed)
2 tsp vanilla extract
1/3 cup coconut sugar
2.5 cup almond flour
1/2 cup arrowroot starch / corn starch
1/2 tsp sea salt
1 tsp baking soda
1 tbsp apple cider vinegar
2.5 tbsp cacao powder
1/4 cup dark chocolate chips (dairy free)
The Instructions
Preheat oven to 350ºF and grease one loaf pan.
In a large bowl mash bananas, well. Add vanilla and coconut sugar and mix. Add almond flour, tapioca flour, baking soda, and sea salt. Stir until you achieve a smooth batter.
In a small bowl and add the cacao powder and chocolate chips.
In the batter, add the apple cider vinegar and stir in. Scoop half of the batter into the bowl with cacao and chocolate chips and stir until well combined.
Alternate scooping the original batter and the chocolate batter into the loaf pan. This will create that marbling pattern in the bread.
Once all the batter is in the loaf pan smooth the top. Bake for 45-48 minutes! This loaf does not rise as much as a bread that uses eggs but will have the yummiest banana bread consistency! YUM!
