2 medium sweet potato, diced
1 tbsp olive oil
1 tsp sea salt
1 tsp garlic powder
1 tsp chili powder
1/2 tsp cumin
1 lb turkey bacon or 1 lb of lean breakfast sausage, crumbled
4-6 eggs, scrambled
8, 6-in corn or whole wheat tortillas (GF - Siete Foods has some delicious options!)
Baby arugula, to taste
Salsa, to taste
Bake turkey bacon (or fry the lean breakfast sausage) according to package instructions.
Preheat your oven to 425ºF and line a baking sheet with parchment paper.
Place the sweet potatoes on the sheet pan and season with oil, sea salt, garlic powder, cumin, and chili powder. Bake for 20-25 minutes. The sweet potatoes should be golden and crispy on the outside, and soft on the inside.
Once the sweet potatoes are ready, warm up your taco shells. Then, assemble your tacos: baby arugula first, and then divide the egg, sweet potatoes and crumbled turkey bacon in between the tacos. Top with salsa or hot sauce and dig in!
