Healthy Sweet Potato Breakfast Tacos

Serves Four

The Ingredients

  • 2 medium sweet potato, diced

  • 1 tbsp olive oil

  • 1 tsp sea salt

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1 lb turkey bacon or 1 lb of lean breakfast sausage, crumbled

  • 4-6 eggs, scrambled

  • 8, 6-in corn or whole wheat tortillas (GF - Siete Foods has some delicious options!)

  • Baby arugula, to taste

  • Salsa, to taste

The Instructions

  • Bake turkey bacon (or fry the lean breakfast sausage) according to package instructions.

  • Preheat your oven to 425ºF and line a baking sheet with parchment paper.

  • Place the sweet potatoes on the sheet pan and season with oil, sea salt, garlic powder, cumin, and chili powder. Bake for 20-25 minutes. The sweet potatoes should be golden and crispy on the outside, and soft on the inside.

  • Once the sweet potatoes are ready, warm up your taco shells. Then, assemble your tacos: baby arugula first, and then divide the egg, sweet potatoes and crumbled turkey bacon in between the tacos. Top with salsa or hot sauce and dig in!
