Loaded Egg Bell Pepper Rings

Serves Two

The Ingredients

  • 4 eggs

  • 1 red bell pepper *you could use any bell pepper

  • 1/2 cup spinach, roughly chopped

  • 2 tbsp crumbled feta cheese

  • 8 cherry tomatoes, sliced

  • S + P, to taste

The Instructions

  • Heat a medium skillet over medium heat.

  • Slice the bell pepper into thick slices. Clean out the center, so it's just the edge.

  • Place the peppers in the skillet and crack an egg into the pepper.

  • Top egg with spinach, feta, sliced cherry tomatoes, and s+p.

  • Cook the eggs until desired doneness. Mmmm!
