1 red bell pepper *you could use any bell pepper
1/2 cup spinach, roughly chopped
2 tbsp crumbled feta cheese
8 cherry tomatoes, sliced
S + P, to taste
Heat a medium skillet over medium heat.
Slice the bell pepper into thick slices. Clean out the center, so it's just the edge.
Place the peppers in the skillet and crack an egg into the pepper.
Top egg with spinach, feta, sliced cherry tomatoes, and s+p.
Cook the eggs until desired doneness. Mmmm!
