Open-Faced Tuna Melt

Serves One-Two


The Ingredients

  • 2 slices of Ezekiel bread

  • 1 tsp butter

  • 1 can albacore tuna (can use can chicken too!)

  • 1/4 cup diced green bell pepper

  • 1/2 lemon juiced

  • 1/2 tbsp avocado oil

  • 1 tbsp chopped green onion

  • 1/4 tsp red pepper flakes

  • 1/4 tsp ground pepper

  • 1/2 tsp dill weed

  • 2 oz. goat cheese


The Instructions

  • Mix tuna, diced bell pepper, lemon, avocado oil, green onion, red pepper flakes, ground pepper, and dill.

  • Toast the bread and spread with butter. Top the toasts with the tuna mixture and shredded goat cheese.

  • Preheat oven to a broil.

  • Place toast on a baking sheet in the oven (center rack) and broil 1 minute (or just until cheese is melted). Yum!
