Raspberry Chia Dream Bowl


Recipe Adapted from Rachael DeVaux at Rachael's Good Eats

Serves Two


The Ingredients

Coconut Chia Pudding

  • One 13.66-oz can full fat coconut milk

  • 1/4 cup chia seeds

  • Pinch cinnamon

Raspberry Chia Jam

  • 10 oz bag organic frozen raspberries (or 3-4 cups fresh organic raspberries)

  • 2-3 tbsp chia seeds

Toppings (optional)

  • 1/4 cup Purely Elizabeth Original Granola

  • Hemp seeds, to taste

  • 1-2 tsp melted nut butter or honey


The Instructions

Coconut Chia Pudding

  • Pour can of coconut milk into large jar and stir in chia seeds + cinnamon. Place in refrigerator to let thicken, roughly about an hour.

  • Keeps for up to 3-4 days.

Raspberry Chia Jam

  • Taken a 10 oz bag of frozen raspberries. Defrost in the fridge (overnight would likely be best). **You can also use fresh berries, or defrost frozen in the microwave.

  • Once defrosted, put berries in jar with 2-4 tbsp chia seeds and put in fridge to thicken for at least one hour.

The Dream Bowl

  • Combine chia pudding, raspberry chia jam and granola (Purely Elizabeth is my fav!) in a bowl with fresh berries. Feel free to top with hemp seeds, cacao nibs and a drizzle a lil nut butter. Enjoy!
