Serves Two
The Ingredients
1 cup banana, mashed
1/4 cup unsweetened almond milk
3 large egg whites (1/3 cup)
1 tsp pure vanilla extract
1 cup rolled oats
1 serving of Vital Proteins collagen protein (unflavored or vanilla)
1/2 tsp ground cinnamon
1 tsp baking powder
2 tbsp Siggi's plain yogurt
2 tbsp pure maple syrup
Optional toppings: Hu Kitchen chocolate chips, banana slices, or nuts
The Instructions
In a medium bowl, combine the mashed banana, almond milk, egg whites, and vanilla extract. Whisk together.
Combine oats, collagen protein powder, baking powder, and cinnamon. Mix the wet and dry ingredients together.
Heat skillet over medium heat. Pour 1/4 cup batter for each pancake. Cook until the pancake bubbles on the top. Flip. Cook until golden.
Divide pancakes into two servings and top with yogurt and a drizzle of pure maple syrup! Add a few chocolate chips, nuts, or banana slices if desired.
